- 1 ripe, fresh avocado, halved, pitted, peeled and sliced
- 1/4 bell pepper, minced
- 1 egg, boiled and cut in half
- 1/4 white onion, minced
- 1/4 broccoli
- 1/2 chicken breast
- 4 cups of quinoa, fully cooked
- Salt & pepper to taste

Instructions

Prepare a pan, cook the quinoa and broccoli, and strain it out onto a plate.

Wipe the pan dry, pour a small amount of oil in and add the vegetables, season with the appropriate amount of seasoning. Stir fry and place on a plate.

Add the chopped eggs to the plate along with the avocado, and arrange on the plate.

Season with a pinch of salt and pepper, as desired and stir.
