  • 1 ripe, fresh avocado, halved, pitted, peeled and sliced
  • 1/4 bell pepper, minced
  • 1 egg, boiled and cut in half
  • 1/4 white onion, minced
  • 1 bag of baby spinach
  • 1/2 chicken breast
  • 4 cups of quinoa, fully cooked
  • Salt & pepper to taste

Instructions

Prepare a pan, cook the quinoa and strain it out onto a plate.

Wipe the pan dry, pour a small amount of oil in and add the vegetables, season with the appropriate amount of seasoning. Stir fry and place on a plate.

Add the chopped eggs to the plate along with the avocado and baby spinach, and arrange on the plate.

Season with a pinch of salt and pepper, as desired and stir.
